About Us
Galileo's is the creation of Anne and Mark Dixon, who set out to make a fun and relaxing place that the whole Boone community can enjoy.
The journey began in late 2007 with the purchase of the old Austin City Limits building. The building, which was built by Boone local, Laverne Fox upon his return from World War II, had been vacant for several years and required massive renovations to become a usable space again.
With the support of family and the help of Todd Pearce Construction, the building was renovated and ready for opening day, June 22nd, 2009.
Menu
With a menu that runs the gamut from breakfast specialties, like our Ham & Havarti Croissants to great late night snacks like our Quesadillas, (made with imported Texan salsa!) Anne and Mark hope that Galileo's is a place where people will stop in for a bite whenever the mood hits them. Menu
Galileo's has a wide selection of beer, wine and liquor as well as an extensive coffee and tea menu for those who just want a good drink to go with their great conversation.
Community
It is a major goal of Galileo's to become a pillar of the Boone community. Galileo's would love to host your community, organizational or private parties. On top of providing a space where community can come together, Galileo's is committed to making Boone a better place.
As part of this commitment, Galileo's will be giving 1% of its sales to Oasis, Inc. Oasis is a local group that works to help victims of domestic violence as well as to prevent future acts of violence from occurring. Galileo's couldn't be prouder of this partnership with Oasis and encourages you to check out Oasis and help in any way you can.
